Our family’s legacy and dedication are reflected in each cup of coffee.
Coffee farming goes back three generations for the Fallas Mora Family. Our grandfather Herminio Fallas Jiménez was one of the pioneers of coffee production in our community.
He grew coffee and took care of his plantations for decades, passing all his knowledge on to his son Eliécer Fallas Mena, our father, who inherited the coffee gene and promoted the production of specialty coffee.
The Fallas Mora Family has always been passionate about coffee farming and it was in 2012 when the older brother, Deyner Fallas, decided to found Cerro Verde Micro Mill to process our own coffee cherries.
The name originates from being located in front of Cerro El Dragón also known as “Los Cuarteles” which is popular among tourists and locals for its breathtaking views and distinguishing green color.
This micromill and farm are located at 1930 meters above sea level in the rural community of San Francisco de León Cortés in the largest coffee-producing region of Costa Rica, Tarrazú.
The intrinsic conditions of coffee quality are acquired from different aspects, coffee variety, climate, geographic position, altitude, coffee plantation and soil management.
A large part of what makes Cerro Verde coffee special is the altitude. At high altitudes, the coffee takes longer to ripen, and this slow process allows for more complex sugars and acids to develop inside of the coffee beans.
When the harvest has the optimal ripening stage (usually by Mid-January), we ensure pickers only pick the ripest cherries. This allows to take full advantage of the organoleptic properties of the coffee cherries.
In the Mill area, coffee cherries are loaded from the top, using the hillside as a natural guide through the milling process using minimal water and electricity. First, cherries are sorted using a presort water tank that removes floaters, then, we carry out the wet processing method.
Once milled, the coffee flows down into the African beds to be 100% dried by the sun until it reaches the ideal humidity point. Thereafter, microlots are tasted and then, the coffee is stored to rest to later be distributed to our customers.
Our customers can know the story behind our coffee. From the soil preparation process to the coffee in its final packaging. During the entire process chain Cerro Verde takes care of every detail to trace the beans for each farm and micro lot.
